Creamy Mac n' Cheese

In honor of the Netflix release of @gamechangersmovie, I am making recipes featured on their website all week long. There are so many variations of mac n’cheese and I love trying them all, so I had to start with this one. And its a winner! Vegan food and wine pairing pro tip: Pair creamy with creamy. This sauce is VERY creamy so it paired well with this full-bodied, oaked chardonnay. I typically follow the rule of white wine with white sauce and red wine with red sauce. Mac n’cheese-adapted from The Game Changers -2 8oz boxes gf @eatbanza elbow macaroni -3 medium carrots, peeled and chopped -3/4 cup raw cashews, soaked in boiling water for 20 minutes -1 tablespoon garlic powder -1 tablespoon onion powder -1 teaspoon paprika -2/3 cup nutritional yeast -1/2 teaspoon ground white pepper -1/2 teaspoon ground mustard -2 2/3 cups unsweetened @ripplefoods milk (or other unsweetened plant-based milk) Boil carrots for about 6 minutes then add to a high-speed blender with soaked cashews, spices, nooch, and milk. Blend for 2 minutes until creamy. Cook pasta according to the package then add sauce to drained and cooked pasta.
