Toddler Approved Creamy Veg Pasta

You know its good when your husband AND toddler are wanting seconds! This dish definitely lived up to its “creamy” name.
Adapted from Deliciously Ella 1 red onion chopped 2 garlic cloves peeled and chopped 2 celery sticks chopped 1 8oz package of sliced baby bella mushrooms 1 large handful of baby spinach 1 10oz package frozen peas 1 large handful of fresh basil 1 teaspoon dried thyme 1 package Banza rotini 1.5 cups of raw cashews 1/4 cup of nutritional yeast (nooch) 1 cup unsweetened oat milk 1 tablespoon tamari juice of half a lemon olive oil, salt and pepper Blend together sauce ingredients until smooth: cashews, nooch, oat milk, tamari, lemon juice, pinch of salt and pepper. In a large frying pan saute onion, garlic, celery in olive oil. Sprinkle with salt, pepper and thyme. Cook for 5-10 minutes until softened. While that cooks , cook the pasta according to package. Add the mushrooms and peas to frying pan. Heat until peas are thawed and mushrooms are softened. Add spinach and chopped basil leaves. Cook until wilted. Once pasta is cooked and drained. Combine pasta, veggies, and sauce to large pot. Mix until combined. Sprinkle with nooch of course!
