Red Lentil Dal

There’s something about lentil dal on a cold day that is so warming to the soul. I often get mistaken for Indian and I’m not mad about it! Indian women are stunning. Although I’m not Indian I can live vicariously through the food. I paired this dish with a Scout Circle Exclusive Pinot Gris. Pinot Gris is dry and has medium-high acidity that pairs really well with dishes full of spice and flavor.

1 Onion diced

2 tbsp Fresh grated ginger

1.5 Cans diced tomatoes

1 can Garbanzo beans

1 tbsp Minced garlic

1 tbsp Garam masala

1 tbsp Curry powder

1 tsp Ketchup

1 tsp Turmeric

1 tsp Cinnamon

1 can Coconut milk

1 cup Red lentils

1 lime juiced

Naan for serving

Sauté the onions, garlic, and ginger for 3-4 minutes. Add in the ketchup, graham marsala, turmeric, cinnamon, and curry powder. Sauté for 2 more minutes.

Add in the coconut milk, diced tomatoes, lentils, and garbanzo beans. Simmer for 15 minutes. When done add lime juice. Top with cilantro if you’d like and serve with naan.
