Carne Asada Marinated Mushroom Tacos


1 lb portobello mushrooms

1/2 cup olive oil

3 Tbsp liquid aminos

1 Tbsp fresh lime juice

2 garlic cloves, minced

1 scallion, thinly sliced

2 Tbsp chopped fresh cilantro

1/2 tsp red pepper flakes

1/2 tsp ground cumin

4 drops liquid stevia

For serving:

corn tortillas

unsalted roasted pumpkin seeds

lime wedges


  1. Cut the mushrooms into 1/2 inch wide strips. Place in a large bowl. Preheat oven to 425.

  2. In a small bowl, whisk together the olive oil, aminos, lime juice, garlic, scallion, cilantro, pepper flakes, cumin and stevia. Pour marinade over mushrooms, stir to coat. Marinate for 15 minutes.

  3. Roast mushrooms for 20 minutes turning halfway.

  4. Plate and top with cilantro, guacamole and lime wedge.
